Roasted Cauliflower

  • 1 medium head of cauliflower, cut into florets about 1 1/2 inch in diameter)
  • 1/4 cup olive oil (I use red pepper olive oil)
  • 1 tablespoons minced garlic
  • 1 shallot, thinly sliced
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoon grated Parmesan cheese
  • Chopped chives (or green onions), for garnish

  How to Make
 
 

Step 1

Preheat oven to 450º F. For mess-free cleanup, line cookie sheet or roasting pan with aluminum foil and spray with oil.

Step 2

Place cauliflower in mound on cookie sheet and drizzle with olive oil and season with garlic, shallots, lemon juice, salt and papper.

Step 3

Place pan in oven and roast for 15 to 20 minutes, stirring occasionally. Remove from oven and sprinkle with Parmesan cheese and chopped chives, serve immediately.

My goodness, but this was tasty! I needed something to serve for Thanksgiving instead of potatoes, so I thought I'd give it a whirl. I used probably more Parmesan than I should have, and sprinkled with green onions, and it was fantastic. Thank you for another low-carb alternative to potatoes!

5 star - do again recipe. Lovely blend of flavours, oven time just between 15 - 20 minutes. The cauliflower still had a bit of crunch. The garlic and shallot together add so much flavor.

Delicious ! we loved it and i will be making it again, loved the bits of garlic and the strings of shallot, lovely flavours with the lemon and parmesan! Next time i will cut back on the olive oil, or maybe my califlower was smaller, it just seem a bit too much oil. Thanks for posting a very tasty veggie.
