Roasted Cauliflower
"This is the only way I'll eat cauliflower . . . almost like eating popcorn. This recipe was inspired by Emeril Lagasse!"

- 1 medium head of cauliflower, cut into florets about 1 1/2 inch in diameter)
- 1/4 cup olive oil (I use red pepper olive oil)
- 1 tablespoons minced garlic
- 1 shallot, thinly sliced
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoon grated Parmesan cheese
- Chopped chives (or green onions), for garnish
What You Will Need
No special items needed.
Step 1
Preheat oven to 450º F. For mess-free cleanup, line cookie sheet or roasting pan with aluminum foil and spray with oil.
Step 2
Place cauliflower in mound on cookie sheet and drizzle with olive oil and season with garlic, shallots, lemon juice, salt and papper.
Step 3
Place pan in oven and roast for 15 to 20 minutes, stirring occasionally. Remove from oven and sprinkle with Parmesan cheese and chopped chives, serve immediately.
