Step by Step Method

Step 1

Walnuts ... Add the walnuts to a baking pan and toast in a 450 degree oven, middle shelf for 5-8 minutes. You want them lightly toasted - when you start to smell the nuts ... they are done, they don't take long, so keep an eye on them. Remove, cool, then rough chop.

Step 2

Sprouts and Grapes ... In a large bowl, add the olive oil, vinegar, salt, pepper, and thyme, mix well. Then prepare the brussels sprouts by removing any outer OLD leaves and cut in half in small, or quarters in larger. Leave the stem on so they do not fall apart. Add the sprouts along with the grapes to the dressing and toss well to combine. Add the mix to a baking sheet (the same one you used for the nuts) lined with foil or parchment paper.

Step 3

Bake ... Preheat the oven to 450 degrees and bake the sprouts and grapes for approximately 20-25 minutes (on the middle shelf) until the sprouts become lightly golden brown and tender and the grapes begin to pop.

Step 4

Serve ... Transfer to a serving bowl or platter and top with the toasted walnuts - ENJOY! Delicious and different. A small onion thin sliced is also a nice addition to the mix if you like.
