Step by Step Method
Step 1
In saucepan, heat fat and add cracked cardamom pods and onion and saute until onion is translucent.
Step 2
Peel turmeric knob and grate on the fine side of the grater.
Step 3
Add drained rice, turmeric, raisins and pistachios to onion mixture and continue to cook until fragrant (about 5-7 minutes).
Step 4
Add water or broth and stir; cover and bring to boil; then reduce heat to low and cook for 12 minutes.
Step 5
After 12 minutes, take a fork, and gently pull rice aside to see if all water has been absorbed; if not, then give it a couple more minutes.
Step 6
When all water is gone, remove pan from heat and let sit for 5 minutes; then fluff with 2 forks (so it does not become gummy).
Step 7
Be sure to remove all cardamom pods before serving, they are inedible!
