Step by Step Method

Step 1

Add beans, garlic, onion, and water to cooker, bring to high pressure, and cook for 15 minutes. Drain well and mash with potato masher. Add chili powder, cumin, and olive oil if desired and mix well.

Step 2

Serve with sauteed onions or salsa.

Step 3

Adding a little more olive oil to the beans after cooking will give beans a creamier texture.

Quick-Soak - Wash beans and pick through.

Step 6

Place in pressure cooker with 3 cups of water for every cup of beans, add 2 teaspoons of salt, bring beans and liquid to high pressure, and cook for 5 minutes.

Step 7

Remove from heat and let pressure fall on its own.

Step 8

Drain well and proceed with recipe.
