"This is one of my favorite sauces, condiments, dips, spreads, to make. It is super simple, quick, and easy to prepare. Perfect to toss with pasta as is; or, you can thin it out, by adding some wine or other spirits - or, even broth to make a thinner sauce. It is also nice to serve as a condiment with grilled seafood, chicken, lamb, pork or beef - and, also good on a variety of grilled vegetables. I also serve it as a spread on sandwiches; and, you can mix it with mayonnaise too - which is delicious. Also, add a bit more olive olive and vinegar to the mix; and, use it as a marinade - or, mix with some sour cream to make as a dip for veggies or chips. Step by Step Method

Step 1

Sauce ... Simply add everything to the food processor; and, pulse several times until smooth. That's it! It's doesn't get much easier then that. Just make sure to check for seasoning; and, re-season with salt and pepper if necessary. Transfer to a small bowl, mason jar; or tupperware container.

Step 2

Note: I do love to let this rest in the refrigerator a couple of hours up to overnight, if you want - to develop some flavor. It will also last up to 7 days in the refrigerator. I have even froze this as well - just thaw in the refrigerator. But, you can always use it right away!

Step 3

Serve and ENJOY! ... As mentioned, whether you use it as a sauce, condiment, marinade, dip, etc ... just have fun with it. It is so versatile; and super easy to make. Full of flavor too.

Step 4

Ideas ... Spread on a toasted crostini; and, top with goat cheese; and broil. Toss with spinach tortellini. Spread over grilled zucchini, eggplant, or summer squash. Use as a condiment over cheese stuffed chicken breasts. Spread on any white fish and bake. Add a spoon to your favorite tomato soup. Marinate shrimp or scallops in it; and, grill. Add white wine and vermouth; and, toss with bucatini pasta and chicken. Top over your favorite grilled steak. Mix with mayonnaise, yogurt, sour cream or even hummus - it's makes a great sandwich spread, or dip. It is also great as is on a sandwich, burger, etc. So, have fun!
