"This is the way my Grandmother made cranberries for the holidays. Using a food processor not recommended, as they tend to puree ingredients too much. Cook time is for letting mixture sit to blend."

Step by Step Method
Step 1
Set up grinder attachment on stand mixer (Kitchenaid) or use a table top grinder, with medium blade. (If using old fashioned table top type grinder, make sure to have a drip pan, as this gets quite juicy.)
Step 2
Run fruit through the grinder. Use the entire (seedless) orange, peels, pith and all.
Step 3
Stir in ginger and part of the sugar (I start with 1 cup-then add more to taste-we like it tart).
Step 4
Let sit at room temperature until sugar dissolves, about 45 minutes.
Step 5
Store in the refrigerator.
Tips
- Stand mixer with grinder attachment or old-fashioned table top meat grinder.
