" Ras-el-hanout is a complex North African spice mixture that imparts a blend of aromatic spicy and earthy flavoure. It is available in most specialty food stores. I like my carrots to have some crunch so I cook them less than the times stated in this recipe The recipe is spicy but oh so good. This recipe is from Bon Appetit magazine June 2012"

Step by Step Method

Step 1

Heat oil in a large skillet, medium heat, add ras-el-hnout and curry powder, reduce heat to medium low stirring often, until fragrant about 2-3 minutes

Step 2

Add carrots, cook, stirring often until slightly firm to the bite about 6-7 minutes

Step 3

Season with salt and pepper, add broth, simmer until all the liquid is absorbed and the carrots are tender about 6-7 minutes

FANTASTIC! Tasty, easy, and healthy...what more can you ask for? We love carrots, and this was a great recipe for them. I loved finding a recipe to use my Ras-El-Hanout in on Zazz...usually I have to go to my cookbooks for that. I made a half recipe with only 2T of oil. Freddy Cat says hi but make sure she knows I'm a Cat not a Bunny. Made for the Billboard recipe tag game.
