Raisin Puffs

"A family favorite since 1989 when I clipped this recipe from a Midwest Living magazine. We love them! "

  Ingredients

  • 1 cup water
  • 1 1/2 cups raisins
  • 2 cups sugar, divided (1 1/2 cups and 1/2 cup)
  • 1 cup butter, softened
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 1/2 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Step 1

Preheat oven to 375F (190C and gas mark 5).

Step 2

Bring the water to a boil in a small saucepan. Stir in raisins and continue boiling, stirring as needed, until the water is absorbed by the raisins. Set aside; cool.

Step 3

In a large mixing bowl cream butter and 1 1/2 cups sugar. Beat in eggs and vanilla.

Step 4

Combine flour, baking soda and salt with the butter mixture. Stir in raisins.

Step 5

In a small bowl combine 1/2 cup sugar and cinnamon.

Step 6

Shape dough into 1-inch balls. Roll balls in the sugar/cinnamon mixture. Place on ungreased cookie sheet.

Step 7

Bake cookies 8 minutes; remove from oven and cool on cookie sheet until they have firmed. !Important! Bake cookies only eight minutes for a soft cookie because they firm up as they cool.
