Quick and Easy BBQ Ham Sandwich
"I forgot all about this recipe. It is so easy and so good; and it literally takes a few minutes to put together and serve. Makes a perfect weeknight dinner. If you prefer to make your own BBQ sauce, please do. But, if you are in hurry, take a quality brand and then "tweak" it a bit with the mustard and preserves. Serve with fries, soup, salad or any of your favorites."

Step by Step Method
Step 1
BBQ ... Take the chipped ham and chop it up a bit. Add to a pot along with 1/2 cup of the BBQ sauce, 1/2 teaspoon mustard and 1 tablespoon apricot preserves. Mix well to combine and bring to medium low heat. I start with half of the sauce ingredients, but it depends on how "sloppy" you want your BBQ. My friend adds all of it because she likes lots of sauce, but I don't like mine as saucy. So start with half of the sauce ingredients and add more if desired. Simply heat on medium low heat until well combined and heated through.
Step 2
Sandwich ... I like the Kings Hawaiian Rolls, they are a bit sweeter; but use your favorite soft roll. I lightly toast mine, but again ... that is a personal preference. Add the BBQ to the roll and top with thin onion slices. Finish with the top roll. Serve and ENJOY! On the side - my favorites are chips, potato or macaroni salad, coleslaw, corn on the cob, soup, chips; and definitely - a pickle.
