Queso Blanco Sauce (White Cheese Sauce Served In Many Mexican Restaurants)

"This sauce is the "White Sauce" that they serve in many Mexican restaurants. It is delicious, and will really please your palate when you use it over your favorite Mexican dishes. You can also use it to serve over Nachos, or as a dip with Tortilla Chips or Tortilla Scoops. You can toss in diced tomatoes, cooked scrambled sausage, cilantro, or whatever you like also. If you like real mild sauce try one jalapeno and see how it tastes. If it's not enough heat add the other one. It's not real spicy made according to the recipe. To Reheat Sauce: Reheat in the microwave, stirring every 30 seconds until creamy and hot. Also, you can heat the sauce in the microwave then put in a small crock pot and keep it on low (Do this about 1/2 hour before serving). If it gets too thin turn off the crock pot for a few minutes, or let sit in the bowl for a few minutes. It will thicken up. If it starts getting too thick add a little milk and stir. NOTE: White American cheese is found at most Deli counters in your local grocery store. This sauce makes plenty for a party of 20 people if you have other appetizers too.   • 20 ounces cheese, American (white cheese, Land O'Lakes brand preferred cut into 1 inch cubes)
  • 1/4 cup green chiles, diced (in the can)
  • 2 jalapenos, pickles, chopped
  • Pickled jalapeno juice (1 ounce)
  • 2/3 cup milk, whole
  • 1/2 cup cold water
  • Pinch cumin, optional

Step 1

Toss all ingredients into a large microwave-safe bowl. Microwave on high for 5 minutes, stopping to stir after every minute. The mixture might seem watery during the first few stirs, but should come together as a nice runny dip after all the cheese is melted.

Step 2

Serve immediately as a dip with tortilla chips or as a sauce over your favorite Mexican dish.
