"This sauce is the "White Sauce" that they serve in many Mexican restaurants. It is delicious, and will really please your palate when you use it over your favorite Mexican dishes. You can also use it to serve over Nachos, or as a dip with Tortilla Chips or Tortilla Scoops. You can toss in diced tomatoes, cooked scrambled sausage, cilantro, or whatever you like also. If you like real mild sauce try one jalapeno and see how it tastes. If it's not enough heat add the other one. It's not real spicy made according to the recipe. To Reheat Sauce: Reheat in the microwave, stirring every 30 seconds until creamy and hot. Also, you can heat the sauce in the microwave then put in a small crock pot and keep it on low (Do this about 1/2 hour before serving). If it gets too thin turn off the crock pot for a few minutes, or let sit in the bowl for a few minutes. It will thicken up. If it starts getting too thick add a little milk and stir. NOTE: White American cheese is found at most Deli counters in your local grocery store. This sauce makes plenty for a party of 20 people if you have other appetizers too. • For the best flavor, use Land O'Lakes American white cheese.
  • If you prefer a spicier sauce, add more diced jalapenos or a pinch of cumin.

  • Replace the American cheese with a vegan cheese alternative like Daiya. This substitution will benefit those who are vegan or have a dairy allergy, as it provides a delicious and creamy cheese sauce without the use of dairy.
  • Replace the jalapenos with diced bell peppers. This substitution will benefit those who do not like spicy food, as it will provide the same flavor and texture without the heat.

We had this sauce over some beef and chicken enchiladas I made, and it was fabulous! Just enough spice to flavor it well, and I look forward to the last of it over Nachos for lunch. Total winner for us!!
