"This is such a delicious and very pretty Cole slaw. It goes fabulous with pork of any kind. You can use any sweet apple of your choice, but I like the Envy apple because it does not turn brown. I also chop the cabbage, onion, and apples in the food processor; separately. We like the texture of chopped better than shredded, but you can certainly shred the cabbage as well, if you prefer. This is not a slaw swimming in the dressing. If you prefer more dressing, adjust it to your liking."

Step by Step Method

Step 1

In a medium serving bowl, mix together the chopped cabbage, onion, and apples; set aside.

Step 2

In a small bowl, mix together the mayonnaise, salt, pepper, sugar and lemon juice.

Step 3

Add the dressing mixture to the cabbage mixture; mix well until combined.

Step 4

Chill thoroughly until ready to serve.
