"I don't like too many sweets; and, you won't see me cook too many either; but these, I really enjoy. The orange really offsets the sweetness of the cookie. This is from a very old Libby's Pumpkin recipe book."

Step by Step Method
Step 1
Batter ... First, add the flour, baking soda, and salt together in a small bowl and mix well to combine. Then, add the butter and sugar to a larger bowl and beat with a mixer until creamy. You can do this by hand if you don't have a mixer, it just takes a bit of work. Once the butter and sugars are creamy, add the eggs, pumpkin, orange juice and zest, and mix again to combine. Then, slowly add the flour mix, a little at a time, until everything is mixed through. Stir in the nuts by hand.
Step 2
Cookies ... I like to bake on parchment paper, but you could also use a silpat. But, it is not necessary to grease the pan. Drop the cookie dough using a tablespoon onto the baking sheet.
Step 3
Bake ... Preheat the oven to 375 degrees. Bake the cookies on the middle rack for 12-14 minutes until the edges are set, and the cookies are golden golden brown. Remove to a cooling rack.
Step 4
Glaze ... Add the powdered sugar, orange juice and zest to a small bowl and mix until smooth. Drizzle over the cooled cookies. ENJOY!
