  • 1 (6 pound) prime beef rib roast (prime rib or boneless top sirloin)
  • Small garlic cloves (any amount you like)
  • Salt and pepper

What You Will Need

No special items needed.
  How to Make

Step 1

Leave the roast out for 1 1/2 hours to come down to room temperature.

Step 2

Preheat oven to 500 degrees. Stuff the roast all over with the garlic cloves. sprinkle with salt and pepper. Place roast in preheated oven. Roast for 30 minutes and turn the heat OFF ... DO NOT OPEN THE OVEN DOOR FOR 2 HOURS. Remove. Allow roast to stand 15 minutes before carving for easier slicing.

Step 3

Thirty minutes roasting time makes a rare roast. If you wish more well-done meat, roast for 33 or 34 minutes at 500 degrees before turning off the heat. The general rule is 5 minutes to the pound for rare and 5 1/2 to 6 minutes to the pound for more well-done meat.
