Step by Step Method

Step 1

Preheat the oven to 450F.

Step 2

Peel and cut the potatoes into long quarters.

Step 3

Parboil in salted water for 3 minutes, then drain.

Step 4

In a large bowl, mix all of the rest of the ingredients, except for the lemon juice, together - add the potatoes to this and mix.

Step 5

Place in a buttered baking dish and drizzle more oil over the top.

Step 6

Bake for 20 to 30 minutes or until nicely browned and tender- serve hot.

Step 7

Pour lemon juice over the top before serving.
