"I tried this at a pot luck dinner and had to ask for the recipe. I sometimes use packaged bacon bits instead of bacon slices, the real bacon bits, not those bacon “flavoured” ones. If gluten intolerant make sure you are using gluten free Caesar dressing."

Step by Step Method

Step 1

Toss potatoes with dressing and a few handfuls parmesan cheese.

Step 2

Top with green onions, eggs and bacon.

Step 3

Refrigerate for about an hour before serving.

I cooked my potatoes a day ahead and used red potatoes, with skins on. We loved all the flavors in this, and the salad dressing was the best kicker of all. A great change from regular potato salad!

Very tasty. I figured you couldn't go wrong with ceasar dressing. I followed the recipe exactly except for using chives from the garden and bacon pieces from the salad section at the store. I also cut down the potatoes to 1 cup and went light on the cheese. I also cut the egg both directions like I was using it for egg salad. Next time I would leave out the bacon. Bacon lovers will think it's great, but I didn't think it was needed, especially as a side dish to go with meat.

This is awesome and much tastier than a regular, boring potato salad. I love the addition of eggs and dressing, and I really loaded it with freshly-shredded Parmesan. I mixed everything together, instead of layering it. The bacon was quite good in this, but next time I will try adding in some minced anchovies instead (I love them in Ceasar salads).

I had to use the bottled bacon bits, although it was real bacon, and it worked out good because I was in a hurry to get it done, but next time I am going to take the time to make the bacon myself. It was a great salad and we will have it again before the summer is out!
