"Another one I made up as I went along. I put olive oil in the ingredients because most people will choose to use it. But I seriously recommend using bacon grease. It adds a depth of flavour to the dish you just won't get with anything else. We had it for dinner, but add some eggs and toast on the side and you've got a pretty good breakfast, too. Servings assume eating only this for dinner."

Step by Step Method

Step 1

Heat olive oil (or melt bacon grease) in a large skillet.

Step 2

Add bacon and potatoes, cover, and let cook 10 minutes, stirring occasionally.

Step 3

Meanwhile, chop onion and celery; add to pan along with seasonings, cover and let cook an additional 5 minutes, stirring occasionally.

Step 4

Slice smoked sausage into 1/4 to 1/2 inch rounds; add to pan, cover and let cook 10 minutes.

Step 5

Dice red bell pepper and add to pan; cover and cook until everything is tender and sausage is hot, about another 5 minutes.
