"This is my version of a Cooking Light recipe. Instead of roasting a pork tenderloin I used leftovers, but posting the entire recipe. AND, it's only 236 calories per serving. "

Step by Step Method

Step 1

Combine the first 5 ingredients and rub mixture evenly over the pork. Place pork in a zip lock bag and seal. Marinate in refrigerator for one hour, turning every 20 minutes.

Step 2

Preheat oven to 375 degrees. Remove pork from refrigerator and let stand at room temperature for 30 minutes.

Step 3

Remove pork from bag and discard marinade. Place pork on a broiler plan coasted with cooking spray. Bake at 375 degrees for 25 minutes or until thermometer reads 120 degrees. Remove pork from oven and allow to stand for 10 minutes.

Step 4

Cut tenderloin into 2 inch pieces and shred with two forks

Step 5

Heat a large nonstick pan over medium high heat. Add one tablespoon of olive oil and one tablespoon of sesame oil to the pan. Add half of pork to the pan and saute until browned and edges are crisp, about 4 minutes. Stir occasionally. Repeat with the remaining oils and pork.

Step 6

To serve place lettuce leaves on plates and divide the pork evenly among leaves. Top with cucumbers and onions. Drizzle hoisin sauce over each serving and pass the sambol oelek.
