Step by Step Method
Step 1
In a bowl stir the butter and sage together and then season it with salt and pepper.
Step 2
Melt 3 tablespoons of the sage butter in a saucepan. Transfer remaining of the butter to a small dish (for serving).
Step 3
Preheat oven to 450 degrees F.
Step 4
Using 3 tablespoons of the melted butter brush each cup of the 12 cup muffin tin.
Step 5
In a bowl whisk together the flour and salt.
Step 6
In another bowl whisk together the wet ingredients (milk - eggs and 2 tablespoons of the melted sage butter). Pour wet over dry and whisk until batter is smooth.
Step 7
Divide batter among the muffin cups.
Step 8
Without opening the oven door at any time bake the popovers for 15 minutes. Reduce oven temperature to 350 and bake for 20 minutes longer or until popovers are puffed and brown.
Step 9
Transfer to a plater and serve with reserved sage butter.
