" Poached fish is always lovely and moist. You can't go wrong if you serve it with your favorite sauce. Salmon Cod or Sea Bass lend themselves well to poaching. You will need a skillet with a tight fitting lid and high enough that it can accomodate a rack to place the fillets on."

Step by Step Method

Step 1

Into a large skillet fitted with a lid, pour in about 1 inch of water, place a lightly oiled rack large enough to hold the fillets in the skillet

Step 2

Add the onions to the water. bring to a boil

Step 3

Add fish fillet to the rack (skin side down if the fillets have skin) place the lemon slices on top. sprinkle with the dill and parsley

Step 4

Cover and cook for about 7 minutes or until the fish flakes easily

Step 5

Have your favorite sauce prepared and have some parsley and lemon wedges for garnish. Plate the fish pour over the sauce and enjoy

What a great way to cook fish!!! I used fresh chopped rosemary instead of dill and parsley and it was just fabulous. Made for the Alphabet Soup Recipe Tag Game.
