Step by Step Method

Step 1

Beat eggs with 1 tablespoon oil and salt. (Set aside).

Step 2

In large skillet saute onions until translucent, and bell peppers until tender with remaining oil stirring frequently on medium heat for about 15 minutes.

Step 3

Add garlic and saute for an additional minute

Step 4

Add rice and mix well.

Step 5

Add soy sauce, egg and scramble until egg is dry approximately an additional 10 minutes or to desired doneness.

Step 6

Add pineapple, hoison sauce, mix throughly and cook for an additional minute.

Step 7

Remove from heat. Add scallions and serve. Yum!

Very good I didn't use peanut oil I use olive oil but otherwise followed the recipe exactly as written, thanks for a delicious rice recipe!

Derf

we were pleasantly surprised at how good this was, it reminded me of a creamy, fruity risotto. We used it as a vegetarian meal and enjoyed the fresh pineapple. I only had orange and yellow sweet peppers, so the colours are kinda all the same but the taste was great.  We thought if the garlic were left out it would even make a good dessert. Thanks for posting.
