Step by Step Method

Step 1

Remove mushroom stems, and chop enough stems to measure 1/2 cup.

Step 2

Cook half of mushroom caps in 3 tablespoons margarine over medium heat for 5 minutes.

Step 3

Drain on paper towels.

Step 4

Repeat with other half of mushrooms.

Step 5

Combine cream cheese and blue cheese.

Step 6

Mix until well blended.

Step 7

Stir in chopped stems and onions.

Step 8

Fill each mushroom cap with cheese mixture.

Step 9

Place caps on cookie sheet.

Step 10

Broil until golden brown and cheese is soft.

These are amazing! I did a quarter batch (8 ounces of mushrooms, everything else reduced accordingly), and it was a perfect amount for four people. The only thing I did differently was to saute the mushrooms in bacon grease since I still had some in the pan from another recipe. Easy, tasty, and I had enough filling left over to spread on bagels. Amazing! I wanted to add a picture, but my new phone takes pictures of a higher quality than the site allows, sorry!
