"These are truly addictive; and, only 5 ingredients! Now, they are NOT difficult to make; but, there are too important notes to making these come out just right. Get a good quality double or triple cream blue cheese. Regular blue cheese does NOT work as well; you need all that cream in a double or triple cream. Saga or St. Agur are two brands I can usually find at some grocery stores; or, at most cheese shops. And, I like to use a whole wheat flour; I think I used King Arthur; but, any brand is fine. Now, I'm not a big baker; and, even I can make these. They are super easy to prepare. And, they are perfect to serve with my 'Spicy Bloody Mary Cheese Spread/Dip #recipe22226 Prep time does NOT include time for the dough to rest and firm up in the refrigerator."

Step by Step Method

Step 1

Cheese ... Add the butter and cheese (both room temp) to a mixing bowl; and, mix (using a hand or stand up mixture), until smooth and creamy. Make sure to scrape or cut off any hard parts of the blue cheese rind, before you add the cheese to the mixer. Then, add in the mustard, cayenne, salt (go easy), and pepper; and mix just until combined. Slowly add the flour until everything is incorporated. Taste and re-season with salt and pepper, if necessary. The dough shouldn't be sticky; but, nice and firm.

Step 2

Crackers ... . Add half of the dough to a sheet of parchment or waxed paper; and, form into a 1 1/2" roll or log - do the same with the other half of dough. If it is a bit sticky; simply add a little flour to your hands and to the dough. Wrap the logs with the paper; and twist or tie each end, to make a nice firm roll/log. I actually use rubber bands on the end. I like to chill mine overnight; but, at least 2-3 hrs until completely firm.

Step 3

Baking ... Make sure you preheat your oven to 425 degrees. Now, I use parchment paper on my baking sheet; but, you can also use baking sheets or Sil Pats. DO NOT grease your pan. Each roll should give you about 15-17 crackers; don't cut them too thin or they will burn. Try to cut them all the same thickness (about 1/4"). If you dip your knife in warm water ... it will make it easier to cut the crackers. Also, roll the log over every couple of crackers - this will prevent the roll from getting a flat side as you cut the crackers.

Step 4

Something I like to do; I take a fork and poke each cracker 2-3 times to give it that 'store bought' cracker look with the little holes. It isn't necessary; but, I think it looks cool. Then, bake on the middle shelf for 12-15 minutes until golden brown.

Step 5

Serve and ENJOY! ... They are a great snack as is; but, delicious served with my "Spicy Bloody Mary Cheese Spread/Dip - http://www.recipezazz.com/recipe/spicy-mary-bloody-mary-spreaddip-22226." Also, delicious on any cheese platter too. Note: You can always add a little fresh diced rosemary or thyme in the dough as well. It is totally up to you. You can easily make these ahead; and keep in a sealed container.
