Step by Step Method
Step 1
Grease bottom and sides of 8-inch square pan with butter.
Step 2
In 3-quart saucepan, cook sugar, milk, corn syrup, and salt over medium heat, stirring constantly, until sugar is dissolved.
Step 3
Cook, stirring occasionally, to 234°F on candy thermometer or until small amount of mixture dropped into cup of very cold water forms a soft ball that flattens when removed from water; remove from heat.
Step 4
Stir in butter.
Step 5
Cool mixture without stirring to 120°F, about 1 hour.
Step 6
Add vanilla.
Step 7
Beat vigorously and continuously 5 to 10 minutes, using wooden spoon, until mixture is thick and no longer glossy.
Step 8
Shape into a 12 inch roll, and roll in chopped pecans
Step 9
Wrap and chill until firm
Step 10
Cut into 1/4-inch slices
