Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Line baking sheets with parchment paper.

Step 3

In a bowl mix first three ingredients (flour - baking soda) together.

Step 4

In a large bowl whisk sugar and butter together using an electric mixer (1 minute) and then whisk in egg and vanilla. Stir in dry ingredients and then stir in the raisins and nuts.

Step 5

Drop dough by teaspoonfuls onto baking sheets.

Step 6

Bake for 12-15 minutes.

Step 7

Let cool on racks.

My kind of cookie to make and eat! Gerry is correct...you can't just eat one. DH makes me tea in the evening and serves it with 2 cookies and 2 Medjool dates. A real treat! Still had ingredients on hand from the holiday season which is always a plus these days. Made them mid week before lunch, so easy made for a surprise when daughter stopped by for her lunch break. Been a while so they were really enjoyed. Great with a cup of tea or coffee, found they were a you cant just eat one kind of cookie!
