Step by Step Method

Step 1

Whisk together salsa, peanut butter, orange juice concentrate, soy sauce, honey, ginger, and curry powder in the crock of the slow cooker.

Step 2

Place chicken thighs over sauce.

Step 3

Turn pieces to coat both sides with sauce.

Step 4

Cover and cook on low heat for 5-6 hours or high heat for 21/2 to 3 hours, until chicken is tender.

Step 5

Garnish with green onions and peanuts if desired.

Made as written. Lots of flavor. Served with rice and asparagus. I think this would work in the oven, too. Just put everything is a baking dish and bake for maybe an hour, if you didn't want to mess with the crockpot. Worked great in the crockpot too, since I put it on before we had to go downtown, and dinner was pretty much ready when we got home..

This was a good and interesting way to serve chicken. We enjoyed this dish with rice and corn (frozen). Made a few minor changes based on what I had on hand by using almond butter (instead of peanut butter) and orange juice (instead of the concentrate) but otherwise made as directed for an interesting dish with a lot of flavor. Thanks for sharing!
