Step by Step Method

Step 1

Preheat oven to 350 degrees

Step 2

Using a kitchenaid stand mixer, combine the sugar, pumpkin, eggs, oil, water and peanut butter. Beat well.

Step 3

In a medium bowl, combine the flour, baking soda, salt, cinnamon and nutmeg.

Step 4

Add to the pumpkin mixture and mix well.

Step 5

Pour into two greased 9x5 inch loaf pans.

Step 6

Bake for 60 minutes or until toothpick comes out clean. (this could take up to 70 minutes).

Step 7

Cool for 10 minutes before removing from loaf pans.

Very moist and great flavor. I cut recipe to one loaf and then cut the amount of sugar to 1 cup for one loaf. It was plenty sweet still. I am going to add some chopped nuts next time.

Very, very nice tasting pumpkin bread. We thoroughly enjoyed the combination of peanut butter & pumpkin, & although we gifted the 2nd loaf to some friends, I now almost wish we'd kept it because the 1st one is almost gone. With a little honey butter this bread is addictive!
