Step by Step Method
Step 1
Preheat oven to 350 degrees.
Step 2
Whisk together 1/3 cup water and 1 teaspoon flax seed; set aside.
Step 3
In a large mixing bowl, beat together 1/2 cup vegan butter, 1/2 cup creamy peanut butter, 1 cup vegan sugar crystals, vanilla and pumpkin pie spice.
Step 4
Beat in the water/flax mixture, baking powder, baking soda, salt and flour.
Step 5
Lastly mix in apple cider vinegar or lemon juice.
Step 6
Roll dough into balls, then dip into sugar.
Step 7
Place on baking sheet.
Step 8
Bake for 12-14 minutes. Cool.
