"When I saw this in Australian Betty Homes and Gardens Diabetic Living I looked in disbelief that it could be diabetic friendly but they have stated it is though certain brands of lemon curd and yoghurt need to be used and it is AN OCCASIONAL DESSERT."

Step by Step Method

Step 1

Put defrosted raspberries, reserved juice and orange juice in a small food processor and process until smooth and set aside.

Step 2

Divide yoghurt between 8 serving glasses and drizzle over berry mixture and top with peach slices, lemon curd and raspberries.

Step 3

Arrange 2 meringues on top of each dessert and decorate with mint sprigs and fold leaf, if using.
