"A wonderful Passover recipe by Amira Cohen. The Jewish name for these is mandelbrot, these treats are similar to Italian biscotti. Amira's Kosher Restaurant and Catering in Altamonte Springs closed in 2009. I love these cookies!"

Step by Step Method
Step 1
Heat oven to 350 F. Your oven rack should be set at center position.
Step 2
Line three cookie sheets with parchment paper.
Step 3
Blend sugar, oil and lemon juice with mixer. Add eggs, one at a time, beating well after each addition. Add baking soda, matzo flour and extracts. Fold in the chocolate chips and almonds.
Step 4
Form 3 (3-inch) logs. Place two logs spacing a fair distance apart on one cookie sheet and the remaining one on the second cookie sheet.
Step 5
Bake one cookie sheet at a time for about 45 minutes. Remove and, while still warm, slice logs in 3/4-inch slices. Put pieces cut-side up on sheets. Sprinkle with cinnamon-sugar. Bake 8 minutes or until golden.
Step 6
Bake the remaining cookie sheet.
