"A Pistou is a condiment made with chopped herbs, similar to a pesto, and is served in or over soups. It was originally brought to Provence by Italian immigrants. This one is a tweak on the usual combinations. Please grate your own Parmigiano, and please, please don't use the stuff in the green can!!!"

Step by Step Method
Step 1
Place the parsley, garlic and olive oil in a mini-blender jar (I use my magic bullet) and puree till almost smooth but you can still see flecks of parsley.
Step 2
Stir in the cheese and orange zest. Season to taste with sea salt.
Step 3
Makes about 1 cup.
