"This is an easy soup recipe I make quite often. You can toss a handful of leftover chicken in here if you like. You can also make this with vegetable soup broth for a vegetarian soup. This soup does not keep as the soy sauce makes the mushrooms harden once cooled."

Step by Step Method

Step 1

In a heavy bottom pot, bring the broth to a boil and add the bok choy, ginger and garlic.

Step 2

Reduce heat to medium-low and simmer covered 10 minutes.

Step 3

Stir in the mushrooms, soy sauce and sesame oil and serve.

I bought baby bok choy jr. I rinsed and cut up what I thought was alot - but could have used even more. This made two servings for us. Hubby and I both agree it's very good.
