"A citrusy bar cookie, with zucchini to make them moist. I think these might be good with some chopped, fresh cranberries, but haven't tried that yet."

Step by Step Method
Step 1
Pre-heat oven to 350°F. Grease and flour a 9x13-inch baking pan.
Step 2
In a large bowl, mix dry ingredients together; stir in walnuts and zucchini.
Step 3
In another bowl, mix egg, orange juice and oil.
Step 4
Fold into dry ingredients and add orange zest.
Step 5
Spread into pan and bake 35 to 40 minutes or until a toothpick inserted in center comes out clean.
Step 6
Cool; cut into squares.
