Step by Step Method
Step 1
Combine the flour, soda, and salt in a large bowl; make a well in the center of the mixture. Set aside.
Step 2
Combine the wheat bran and boiling water in a large bowl; stir well, and set aside.
Step 3
Place eggs, buttermilk, and chopped orange in the container of an electric blender or food processor; process until smooth. Add the buttermilk mixture to the bran mixture; stir well. Add sugar, butter, and oil. Stir well.
Step 4
Add the buttermilk mixture to the flour mixture, stirring just until the dry ingredients are moistened. Add the raisins; stir well. Cover the batter, and store in the refrigerator up to 1 month.
Step 5
When ready to bake, spoon the batter into greased muffin pans, filling two thirds full. Bake at 400 degrees for 20 minutes or until a wooden pick inserted in the center of the muffin comes out clean. Remove from pans immediately, and let muffins cool completely on wire racks.
