Step by Step Method

Step 1

In a large saucepan, cover potatoes with 2 inches salted water. Bring to a simmer and cook until potatoes are just tender, 15 to 20 minutes. Drain thoroughly.

Step 2

In a large nonstick skillet, heat oil over medium-high; add potatoes and season with salt and pepper. Cook, mashing potatoes slightly, until golden brown in spots, about 5 minutes. Add garlic and continue cooking for another 5 or so minutes.

Step 3

Transfer to a serving dish and keep warm.

Step 4

Add bacon to skillet. Cook until bacon is browned, about 3 minutes. (If the bacon exudes alot of grease, leave only enough grease to cook the green beans).

Step 5

Add green beans and cook, stirring occasionally, until bright green and crisp-tender, about 4 minutes.

Step 6

Add to potatoes along with lemon juice to taste. Season with salt and pepper and toss gently to combine.

This was terrific! I had mini creamer potatoes - boiled earlier in the day, frozen green beans - thawed. I didn't use the oil - just heated spuds and beans in the bacon grease. I am sure if I'd used fresh green beans, they would have had to cook longer. But this way worked out great b/c I knew we'd be getting home late and I would want to have something almost ready to eat. Best of 2022.

There is nothing about this recipe that I don't like! It was pretty easy to throw together, the house smelled amazing while it was being prepared, and the whole family ate it without any fuss! It was delicious! I made as directed, but had to substitute the red potatoes for small yellow potatoes (it's what the store substituted for my grocery pick-up).
