"Do you remember ice boxes? I do. When I was little my grandmother had one. I guess they would call them refrigerator cookies now, but whatever you call them, these are good--especially with a cup of tea. This makes a lot of cookies."

Step by Step Method

Step 1

Mix both sugars and shortening mixing well; add eggs and vanilla.

Step 2

Add flour, soda, and salt and mix well; add oatmeal mixing well again.

Step 3

Roll into rolls about 2 1/2" thick and wrap in wax paper or plastic wrap and put them into the ice box (I put them into the freezer for a very short time so they are quite cold--easier to slice).

Step 4

Take out, one roll at a time, slice thin and place on lightly greased cookie sheet.

Step 5

Bake in 350 degree oven for 5-6 minutes.
