"I got this recipe from a library cookbook from the 1970s. When I went to find the cookbook and author later, I hit a dead end. This recipe was 20+ years ahead of its time. Who knew then that this would become one of the ever popular sandwich "wraps"? It does take a little preparation, but I liked the fact that this can be wrapped in cling wrap and keeps in the fridge for 2-3 days without losing its flavor. Nice make ahead for a picnic or brown bag lunch."

Step by Step Method

Step 1

To barbecue onions; heat oil in a skillet over medium/high heat and saute onions until softened but not brown.

Step 2

Add barbecue sauce of your choice and stir until onion is wilted. Set aside.

Step 3

Combine broccoli and cauliflower in a small bowl with 1 tablespoon of water in microwave and cook on "High" for about 2 minutes, just until veggies are slightly tender. Drain.

Step 4

Combine broccoli/cauliflower with carrots, cabbage, and squash.

Step 5

Spread each tortilla with mayonnaise, then put a line of broccoli/cauliflower/veggie mixture down the center of the tortilla, a line of dill pickle, a line of barbecued onions, a line of lettuce and alfalfa, a slice or two of avocado.Sprinkle to taste with salt.

Step 6

Fold in ends and roll tortilla tightly around vegetables.

Step 7

Wrap tightly in cling wrap and refrigerate. Will keep from 2-3 days. When ready to eat, cut it in half and push cling wrap down but leave one end closed to catch the drippy sauce. Enjoy!

A real winner at our house! Can't believe I've been cooking all these years and had never made nor tasted barbecued onions. Loved them! The barbecued onions alone make for a five! Had most of the ingredients, used spinach wraps - made for an awesome lunch. How good? Come Friday there will be wraps rolled and ready for the spring break weekend. Would that I had found that recipe way back when!
