"I prefer a bit of extra tang, especially for green salads, so I created this version with a higher-than-usual vinegar-to-oil ratio. One time that I made this for salad for a dinner party, one of the guests came out to the kitchen and chugged the leftover dressing."

Step by Step Method

Step 1

Combine oil, vinegar, salt, sugar, paprika and mustard powder and whisk together *or shake well in a jar).

Step 2

If desired, split garlic clove in half and drop into the jar or cruet holding the dressing.

I also love a higher vinegar to oil ratio in a vinaigrette. I followed the recipe as directed except I did equal proportions of oil and vinegar (and an accidental shake of black pepper—I thought it was on there!). Very much enjoyed on my salad at lunch and look forward to the leftovers soon. The garlic makes this extra tasty.

This dressing is FABULOUS! I opted for extra garlic, therefore I used 2 cloves instead of 1. I love the addition of the paprika. Way to go Echo Echo!
