"Back in 1993 my Mother and I became lifetime members of WW. She revised the 0 point soup recipe. She won 1st place with it at her Office "Soup Cookoff" one year. I also have revised her revision. It called for a can of Cajun stewed tomatoes which I can no longer locate. I now use 1 tsp Cajun spice."

Step by Step Method

Step 1

Spray large saucepan with cooking spray or use a tablespoon of olive oil.

Step 2

Saute' onion, carrots and celery until tender, approximately 5 minutes.

Step 3

Combine beef broth, tomatoes, cabbage, bouillon cubes, garlic, Cajun spice, and basil in the saucepan.

Step 4

Bring to a boil; reduce heat; simmer approximately 30 minutes.

Step 5

Add zucchini, continue simmering for another 10 minutes.

Step 6

Serve hot.

Yum! I added some Slap yo Mama seasoning to stand in for the cajun flavors. Also, sliced 2 chicken sausages (4 points each) and added them to the pot. It made a filling meal!

This is a great tasting and very filling soup!! The cajun seasoning really works well in here. I pureed my soup to give it a creamy consistency and it was lovely.
