"OK, this may not be your classic version of carrot salad; but it is what I grew up with. It is a bit lighter, with a bit more spice, and tons of flavor. Take advantage of the shredded carrots you can get in the grocery store if you are short on time. Also, I like to use a mix of brown and golden raisins; it isn't necessary, but I like the mix. This is a perfect BBQ, potluck, or salad to entertain with. Easy to make ahead; very inexpensive - and a nice summer salad."

Step by Step Method
Step 1
Orange ... I suggest buying a small orange, zesting first; then, cutting in half and juicing. One half of the orange should give you 1 teaspoon of zest; then the entire orange should give you 2 tablespoons or a bit more of the juice. You only need 2 tablespoons for this recipe.
Step 2
Dressing ... Add the yogurt, mayonnaise, orange juice, zest, ginger, cinnamon, salt, and pepper to a bowl and mix well.
Step 3
Salad ... Add the carrots and raisins to the dressing; and, mix to combine. Season with any additional salt and pepper if necessary. Cover and refrigerate at least 30 minutes before serving.
Step 4
Serve and ENJOY! This is such a nice simple salad. It is easy and refreshing - perfect summer salad.
