Step by Step Method

Step 1

Preheat oven to 200C (180C fan forced).

Step 2

Arrange mushrooms and ham in a 27cm x 17cm (base measurement) ovenproof dish.

Step 3

Drizzle the mushrooms with oil.

Step 4

Bake for 10 minutes.

Step 5

Sprinkle mushrooms with cheese and bake for 5 minutes more.

Step 6

Carefully crack eggs onto the ham and bake for 5 minutes more or until cheese is melted and eggs cooked to your liking.

Step 7

Season with salt and pepper and serve at once.

This is just so easy and yet such a wonderful recipe. I used Prosciutto instead of ham and topped with some roasted cherry tomato's, everything else as written. I made in separated dishes DS turned his dish onto toasted muffins, which he loved and the rest of us just had this out of the dish served with toast. DS and DH both said they "preferred this over bacon and eggs on toast". A winner here Pat...Thanks
