"I was thrilled that my chives have grown enough this spring to be used already! This omelette recipe came from Recipe Lair, but their recipe used extra sharp cheddar cheese. I used my new mini spring coil whisk for extra fluffy eggs."

Step by Step Method
Step 1
Beat the eggs, water, and sour cream until well blended. Stir in the snipped chives, some salt & black pepper.
Step 2
Heat a skillet, add in butter. Pour the egg mixture into the skillet and cook until the top is nearly set.
Step 3
Sprinkle cheese on one half and gently fold the omelet over the cheese.
Step 4
Cook a few more minutes to melt cheese, serve immediately.
