Step by Step Method
Step 1
Bring a large pot of salted water to a boil. Add lasagna noodles and cook per package directions. Once done, I put them out to cool on cookie racks.
Step 2
Meanwhile, brown meat in heavy skillet over medium-high heat, drain grease. Reduce heat to medium and add onions and garlic, cooking until softened.
Step 3
Add seasonings and tomato paste, stir 1-2 minutes. Taste and adjust seasonings.
Step 4
Add water to reach desired consistency. I like mine thicker at 1/2 cup water.
Step 5
Simmer until noodles are cool enough to work with.
Step 6
Preheat oven to 350 degrees and grease a lasagna pan.
Step 7
Slice mozzarella very thin. Whisk ricotta with eggs, salt, nutmeg, and a bit of milk to reach desired consistency. Taste and adjust seasoning.
Step 8
Layer a third of the sauce, half the noodles, almost half the mozzarella, and half the ricotta. Repeat. Finish with remaining sauce on top, then remaining mozzarella (shred)
Step 9
Cover loosely with foil and place on rimmed baking sheet.
Step 10
Bake for 35 minutes, then remove foil and bake 25 more minutes.
Step 11
If made ahead, remove from fridge 2 hours before baking and add to baking time at least 15 minutes.
