"A flavorful lowfat muffin. This makes a lot of muffins, but they freeze well. Commercial prune puree can be found in the baking section or ethnic section of the grocery store, or if you want to make your own, there are many recipes on the internet. Google it :). (also known as Lekvar)."

Step by Step Method
Step 1
Preheat oven to 400°F. Coat 18 muffin cups with nonstick cooking spray.
Step 2
Combine first 8 ingredients in a large bowl.
Step 3
Combine remaining ingredients and stir well with a whisk.
Step 4
Add to flour mixture and stir just until moist.
Step 5
Spoon batter into 18 muffin cups.
Step 6
Bake 18 minutes or until done. Remove from pan immediately and cool on wire rack.
