"My siblings and I always called this the Minnesota Special. I have no idea where that name came from. This is a very easy sandwich to make and I will admit, I enjoy it more often than I should. (It's my favorite sandwich) Feel free to add a slice of onion or tomato, both are good on this! "

Step by Step Method

Step 1

Place frying pan on medium high heat, add oil. Meanwhile, peel potato and slice thin.

Step 2

Lay potatoes in hot pan in a single layer. Fry until deeply browned on both sides. When you flip all potatoes over, start your toast.

Step 3

When toast is ready, assemble sandwich. Slather mayo on bread, place slice of cheese and fried potatoes on top. Salt and pepper to taste. Eat and enjoy!

This is a sandwich I have made for many years. I usually make it on fresh umtoasted bread with no butter. Great taste as the crispy potatoes bring it to the next level. Salt & pepper are a required ingredient. Dissie thank you for posting an all time favorite.
