"These make perfect appetizers - sweet and spicy - and, just a couple of bites. I like to add either a small grape tomato or mushroom to the skewers. Perfect to make ahead and marinade; then, just a few minutes on the grill - and, they are ready to enjoy. Great for a dinner party, entertaining - game card night; or, a BBQ.Prep time does include time for the steak to marinate."

Step by Step Method

Step 1

Steak ... This recipe is really best when the steak is really thin sliced. To make it easy to slice ... freeze your steak. NOT solid - just until firm, about 30 minutes. This allows you to slice your steak really thin. If using a tougher cut of meat such as a skirt or flank steak; make sure to cut against the grain; otherwise, the meat will be tough.

Step 2

Marinade ... Add all the ingredients to a large ziploc bag or glass bowl and add the steak. Seal the bag and shake to combine, or mix if using a bowl and cover with plastic wrap. Refrigerate for at least 30 minutes up to 2 hours. The steak is thin sliced; so, you don't need to marinate much longer. It's hard to say exactly how many slices of steak you will have; but, I like to use 2 slices of steak, and 1 tomato or mushroom per small skewer.

Step 3

Note: If using mushrooms, I like to add them to the marinade with the steak, the last 15 minutes. This isn't necessary; but, I like to if possible. I do NOT marinate the tomatoes.

Step 4

Skewer ... Make sure to soak your skewers, if using wood skewers; I use those small 4-5" ones. Add 1 piece of steak, ribbon threading on the skewer. Thread the skewer through the end of the steak, then though the center; then through the top. It looks like a ribbon. Then, add a tomato or mushroom; then, another piece of beef threaded the same way. They make a perfect appetizer size - one to two bites. Make sure to spread everything out so it cooks evenly.

Step 5

Grill ... Brush or spray the grill with a neutral oil - vegetable or canola oil. Then, season with skewers lightly with pepper. Fish and soy sauce are both salty; so, I don't find it necessary to add salt - just pepper. Grill the skewers on high heat, 1 to 1 1/2 minutes per side. And, if you like your steak medium rare to rare ... you aren't going to get that - they are just too thin. But, even medium, or medium well; they will be full of flavor, and extremely tender.

Step 6

Serve and ENJOY! ... No sauce needed, just serve as is. A perfect appetizer or starter dish. Great for a card or game night with friends. Quick, easy, and delicious. I prefer the tomatoes; but, my friends prefer mushrooms. Either one is delicious.
