"This was a really easy and very tasty way to take advantage of an abundance of summer squash and zucchini this summer. The Italian-Romano seasoning blend I used gave this a depth of flavour you'd have to taste to understand, but it is equally good with regular Italian seasoning. The best part is this is microwaved, so it adds zero heat to the kitchen."

Step by Step Method

Step 1

Layer the zucchini, summer squash, mushrooms and onion in a glass casserole dish.

Step 2

Drizzle olive oil over the top; sprinkle with Italian seasoning.

Step 3

Microwave on high, covered, for 6 minutes.

Step 4

Sprinkle feta cheese over top of casserole; microwave, uncovered, an additional 2 minutes.
