"There is certainly nothing fancy or difficult with this dish; but, it was by far, my Dad's favorite recipe. I think Mom had to make this at least twice a week for him. It is easy, quick, and really delicious. Now, these are the amounts I find work best ... but if you want more celery, or more peppers; by all means, adjust it to suit your tastes."

Step by Step Method
Step 1
Vegetables ... Add the cauliflower to a 'microwave safe' casserole dish. Then, top with the chopped celery, peppers, onion, water, seasoning, salt, and pepper; and cover with plastic wrap.
Step 2
Cook ... Microwave on high heat for 5 minutes. Remove, uncover, and stir to combine. Cover, and cook another 3-5 minutes until tender. The time is difficult to pinpoint depending on the amount of cauliflower, type of dish, and the individual microwave. Normally, it takes around 8-10 minutes (total) for the cauliflower to be tender.
Step 3
Finish ... Remove from the microwave, pour out any water remaining (usually there will not be any), add the butter and mix to combine; top with the cheese, and cook uncovered another minute until the cheese is melted. Add as much butter as you want; I tend to only use 1 teaspoon; but, if you are a butter lover, add a bit more.
Step 4
ENJOY! This goes with any of your favorite dishes. I usually finish with a little extra pepper or even some fresh chives.
