"This is adapted from Cooking Light magazine. It doesn't say to toast the bread but I did. I can imagine eating this wrapped in lettuce leaves or as a tortilla wrap too. It is good with and without the mayo. YUM!"

Step by Step Method

Step 1

Toast bread if desired.

Step 2

Combine olive oil and vinegar in a small bowl; brush oil mixture evenly over 1 side of each bread slice, inside pita pockets or on tortilla.

Step 3

Combine tuna and the rest of the ingredients (except lettuce).

Step 4

Place 1 lettuce leaf on each of 4 bread slices.

Step 5

Top the lettuce evenly with tuna mixture, and cover with remaining bread slices.

Step 6

Serve immediately.

Well i used green bell pepper and had to leave out the sun dried tomatoes, when i went to use them they had turned, so i subed with fresh diced tomato, also had to use sliced ripe olives, everything else as directed. We loved it, great flavour on French brown loaf slices, love the olive oil and balsamic!

I couldn't wait to try this sandwich because I knew it was going to be good and it was. I mixed it up and let it sit for a couple of hours for the flavors to marry and it made great sandwiches! I used regular mayonnaise in mine. I know I will be eating these little gems often. Thank you for sharing this one T! Linda

I made this omitting the 3 fisrt ingredients and the lettuce as I was not serving this as sandwiches but serving it with crackers and crudites. It was made for a bunch of little ones who really enjoyed this. Made for the Billboard Recipe Tag Game
