Step by Step Method

Step 1

Preheat oven to 400 degrees F.

Step 2

In a food processor blend chop the onion and garlic until finely chopped. Transfer to a large bowl and add the beef and 1/4 cup ketchup and the next three ingredients (eggs - pepper).

Step 3

In the food processor add the bread; using on/off turns blend until the bread is chopped. Transfer to the bowl. Stir in parsley.

Step 4

Transfer mixture to a loaf pan (9x5x2 inch). Arrange bacon slices on top of meat loaf mixture, spacing apart and tucking edges down into the meatloaf. Spoon remaining ketchup between bacon slices.

Step 5

Bake the meatloaf for about 1 hour or until the meatloaf is cooked through. Let rest for 10-15 minutes.

Step 6

Slice spatula under one end of meatloaf; tilt pan; and slice loaf onto the platter. (I usually use two spatulas).

As I was using very lean heart smart mince (just under the pound), I only used 2 slices of bread (wholemeal/wholegrain) and 1 egg for the bacon I chopped up 5 slices of rindless bacon (similar to Canadian bacon) and for the other 2 slices I used middle cut which is full slice of bacon though I did cut of the rind, otherwise made as per recipe and we enjoyed though would cut back a bit on the bacon maybe just 4 slices of the rindless. Thank you ellie for an enjoyable dinner, made for Pick Me tag game.
