"Well guys, here's yet another recipe I came up with using leftover meatloaf. I wanted to make something different besides the usual sandwich, and I also had some salsa to use. Here is the result.Originally posted on another site in 2007. " Keep Smiling :)"

Step by Step Method

Step 1

Heat oil in a medium sized non-stick skillet over medium high heat.

Step 2

Prepare tortillas in this order,lay tortillas on flat surface,spread 1 Tablespoon of salsa on half of tortilla, place half of meatloaf over salsa, top with half of cheese.

Step 3

Fold other half of tortilla over cheese.

Step 4

Repeat with rest of the ingredients for other tortilla.

Step 5

Place both in skillet and lightly brown on both sides,about 10 minutes total, or until desired brownness is reached.

I made a meatloaf today so I could make this recipe tonite for our dinner. Apparently the old saying is true that "you can take the girl out of Texas, but you can never take Texas out of the girl". All that said, we so enjoyed this creative & tasty way to fix meatloaf leftovers. With just 2 of us, any size meatloaf seems to last forever & this allows for a new take on the genre. Thx for sharing this recipe Shapes. I expect it will have many encores as our table. :-)

Had some leftover meatloaf sitting in my freezer so when I saw this I knew I had to try it, we loved this so I now have a reason to make another meatloaf, TY!
